with spanning tree am I right in saying if I had say 3 switches linked together twice, would 2 ports be blocked here ?

Yes correct.
Spanning tree will always put ports into blocking state whenever you have redundant links to avoid layer 2 loops

If all three switches are connected to eachother, then yes properly configured Spanning tree should block 2 ports.

| Span tree |
B 3 sw C
| test |
------SW 3---XX
In this config if SW1 is the root bridge, Spanning tree would block 2 ports on Link C.
