Hi all, is there a rule for how many switches you can have for reach sopanning tree root ?

There is no hard and fast rule but all the spanning tree parameters are based on a diameter of 7 switches from the root
HTH, rate if it does

diameter of the STP domain (dia)? This value is the maximum number of bridges between any two points of attachment of end stations. The IEEE recommendation is to consider a maximum diameter of seven bridges for the default STP timers.

what do we do if there are more than 7 bridges here ?, would we use another vlan so this then has another instance of a root ?

You can change the diameter number as part of a CLI command at the root bridge.
Switch(config)# spanning-tree vlan vlan-id root
{primary | secondary} [diameter diameter]
I would however ensure that all spanning-tree timers are adequate for the diameter you configure. (debug)
The out-of-the-box spanning tree timer defaults are based on a tree diameter of less than or equal to 7.

would this be if they were daisy chained twicw together? how about if they all plugged into 1 dist switch ?
