Both look the same and both have the same large color display. What does the 7971G offer over the 7970G?

the main diff btw both of them is that 7971 has a Gig port whereas 7970 has a 100 Mb port

Ahh, I see. I thought there were two models of the 7941. The 7971G and the 7971-GE (gigabit). There is only one I assume and that is the 7871-GE?

yeps ... only 7970 and 7971 has this naming, all other phones dont have anything such. I know it can get a little confusing at times :-)

I see, but they are essentially the same phones, but the 7971 has gigabyte ethernet support?

Hi Peter,
Like Mahesh said, the only difference is that the 7971G-GE has a 10/100/1000 (Gig) port. Here is a good clip from the product documentation;
The 7971G-GE **Gigabit Ethernet** IP phone is "feature identical" to the Cisco Unified IP Phone 7970G. It also includes a backlit, high-resolution color touch-screen display (320 x 234, 12-bit display with 4096 colors) for easy access to communication information, timesaving applications, and features.
