If you mean dynamic VLANS, where a port is dynamically assigned to a VLAN based on the MAC address of the device connected, then look in the documentation for "configuring VMPS".
Please note that the 3560 is VMPS client only and you need to set up a server which can be a Catalyst 5000/6500 switch.
