Will IPCC work if both nic have an IP address in different subnets, and not for monitoring, but access purposes? There is a situation where the remote users of the IPCC cannot access the desktop agent/supervisors, so a VPN setup is being planned out with the second nic terminating on the VPN device. Will it work, or will it cause the system to puke?

This will not work. Second NIC only works for recoding/monitoring purposes

I didnt think so, but can not find any supporting documentation.

Second nic works for access purposes. Just make sure is the first one in Advanced Settings in Network connections.

I would strongly recommend against this for a production deployment as it will put you in an unsupported state. The install guide is very explicit about the NIC binding order. The CAD Install guide also explains the restrictions on the second NIC. This is one of the first things TAC checks when you open a case.
