Hi,
is it possible to use HSRP address as GRE tunnel endpoint in order to have redundancy?

Hmm no, what sense it would make? Use a loopback address if you have multiple interfaces connecting to the other end of the tunnel.

I have one router at remote site and two routers at headquarter site with HSRP configured between them. If I want to configure only one tunnel interface at remote site, can I use headquarter's HSRP address as tunnel destination?

No, you will need to configure two tunnels, one per router. The end result will be the same.
