servers on multiple vlans

How do hosts on different vlans talk to the server? The server wouldnt have to have a connection to each vlan would it? Or would you use a trunk or what?

You need to have InterVLAN routing configured. If you have some router you could probably configure "router-on-a-stick" on it.

But say the server(s) are on vlan 1 and some hosts are on vlan 2 and some are on vlan 3. The computers from 2&3 should be able to communicate with the server(s) (if inter-vlan routing is setup) because it is not a broadcast they are sending correct?

All VLANs should have different IP subnets and they will all communicate to each other just fine.
