Hi Dan,
If you just want to delete startup config issue
delete nvram:startup-config
if you want to delete all the files in nvram then you can go with any commands already mentioned by other experts.

yeah, on most devices you can either do:
erase nvram
or
erase startup-config

Hi,
just to add what everyone has said....
if this switch has been part of VTP domain then it will also VLAN.DAT file in the flash:
you should also delete that file (delet flash:vlan.dat)
