Is there any potential pitfall in assuming vlan.dat is the only file stored in const_nvram on the cat6k?

You may want to ask this on one of the switching forums so it gets proper visibility.

Hi
No, this should be the only file but to be on the safe side you can enter the command
dir const_nvram:
This should show you the full contents.

So far I've seen nothing but vlan.dat on const_nvram on the cat6k's, hence the question. I wonder what else could be there.
On a related note, just found out the 3500s had vlan.dat on flash: instead.

Yes, the desktop switches will have vlan.dat on flash:.
