Is it possible to create multiple IP address pool and assign each to a different VPN group with the PIX 506E?

Absolutely...
ip local pool vpn1 192.168.100.1-192.168.100.255
ip local pool vpn2 192.168.200.1-192.168.200.255
vpngroup group1 address-pool vpn1
vpngroup group2 address-pool vpn2

This is exactly what I thought. I was just a bit reluctant because of:
isakmp client configuration address-pool local name_of_pool_address
Do we need to have:
isakmp client configuration address-pool local VPN1
isakmp client configuration address-pool local VPN2
and so on?

You do not need those commands.
