We are looking at setting up a basic NAC for VPN/Wireless users. What is the minimum setup we would need? We already have a Windows based ACS server. Would i just need a NAC appliance like the 3310?

The NAC appliance is a self contained, easily deployed NAC solution that includes the Clean Access Server, Clean Access Manager and Clean Access Agent.
It would probably meet your requirements unless you need integration with external antivirus policy servers or 802.1x authentication.

what type of NAC? if you want want clean access you will need a NAC appliance. if you are just doing CTA or identity based with MAC addresses, you just need the ACS servers.

I want a device to check remote and mobile devices when they access the network. These devices need to have the latest AV and MS updates applied to them.

in that case, yes you will need a clean access setup. most likely a clean access manager and at least one clean access server.

You can get a CAM/CAS all on one box..though thats not suggested method...you would want a CAM (cam lite probably) and a small CAS based on how many users would be active on the CAS
