Based on their "quick ref guide", "older" 3560G and 3750G models have 32Gbps switching fabric, while the newer "E" models have 128Gbps fabric.
In most cases, even on the older models, you shouldn't have to worry about the oversubscription ratio of the ASIC. You should only have to worry about the oversubscription ratio of the uplink or, in 3750's case, the "stack ring".
