We enable dhcp snooping on the network. Is there a easy way to verify the functionalities?

You only have to connect a dhcp-service on an (dhcp-)untrusted Switch-Port.

I think that you mast install some sniffer on the computer which connected with untrusted port
and install some sniffer on the DHCP server, and compare results (sniffer maybe the WIRESHARK its
freeware)

show ip dhcp snooping binding
will show you all the MAC to IP bindings. Is this what you are looking for?
