VoIP Expansion to Remote Branch offices

Currently in our organization we have VoIP running only in our headoffice. That is from the HO we can call the other office through the use of dialing an extension. I'm not sure how this is setup as it was done some time back by others. What I want to do is, to be able to expan VoIP to the remote branches. I have been doing some reading in Cisco on Cisco Unified Communications Manager, but it's just taking me from page to page. What are the basics of setting up a VoIP environment in a network? Please give me some ideas what steps to take and and to identify what's needed for a VoIP environment.
