In a laboratory off-line enviroment. I would use in a side a cisco 7500 for instance and a GSR as a main router.
How can I simulate the L3 traffic in order to monitorize the 10G int??

what properties of the traffic do yo uneed to simulate? If you only need to test routing and forwarding functionality, then simply plug PC behind your routers. But if you need to measure performance impact of various configurations, you need hardware traffic generator like Agilent or Ixia.
I haven't heard of a 10GigE interface for 7500, though.

If you're thinking about performance (e.g. throughput) tests, then I'm afraid you can't avoid hardware traffic generators.
