I need one 1M stack cable. Which one is suitable ? CAB-STACK-1M or CAB-STACK-1M-NH ?

You can use either one of those.
CAB-STACK-1M= Cisco StackWise 1M Stacking Cable
CAB-STACK-1M-NH= Cisco StackWise 1M Non-Halogen Lead Free Stacking Cable

It's about the composition of the material that is used in the cable's coating.

Non-Halogen Lead Free is for fire reasons they won't release harmfull gasses and will be smoke free.
They are used to meet fire regulations
