Is there a way to configure or change a Device's name (Not part of CDP) on a Catalyst 6509 switch interface?

I do not understand clearly your question. The 6509 does have a device name and you can change it if you want. But there is not a device name on the interface. Perhaps you can clarify your question so that we can give better answers.

I can see uplinks to our core devices through arp tables and Ip addresses but I was wondering if I can put a name to does interfaces...ie. Sh int giga0/1
GigabitEthernet0/1 is up, line protocol is up
Inbound access list is not GigabitEthernet0/1 is down, line protocol is down (notconnect)
Hardware is Fast Ethernet, address is 0011.92ae.a081 (bia 0011.92ae.a081)
MTU 1500 bytes, BW 10000 Kbit, DLY 1000 usec,
reliability 255/255, txload 1/255, rxload 1/255
Encapsulation ARPA, loopback not set
Keepalive set (10 sec)
Auto-duplex, Auto-speed, media type is 100BaseTX
input flow-control is off, output flow-control is unsupported
ARP type: ARPA, ARP Timeout 04:00:00
Last input never, output never, output hang never etc...
If I have a server called OTTSAT12 that is uplinked to GigabitEthernet0/1, I would like to know if it's possible for me to configure the interface to show this name instead of the MAC or IP address.

you can use "description" under interface configuration:
conf t
int gi0/1
description OTTSAT12
