Is the 2950/2960 appropriate for a high traffic production environment?

Depends what you call high-traffic, how many ports you need, and what other features you need.

I like the 3750s for high traffic environments due to the stacking capabilities and the single mgmt of multiple switches. Give those a check.

I also agree with using the 3750's. With those switches you will get layer 3 capabilities that the 2900 series switches do not have. That way you can create Switched VLAN Interfaces and have segmented networks.
