There's a plethora of them! As no one book is perfect with everything. :)
I would start with the Doyle books and you will cover a lot of ground that way.
While there are technically no prerequisites to CCIE (the written first, then the lab), it is a fairly big step to go from zero to CCIE like that.
The CCNA/NP career certifications were designed to be introductory stepping stones towards CCIE. There is still a large gap between them, but getting some of the groundwork is a very important thing to have a deep understanding of.
The point with any of these is not just to pass a certification, but to actually understand the technologies along the way.

It's good to aim high, but you should also be realistic. It is best not to run before you can walk, otherwise you are likely to fall. CCIE is like the PhD of networking: a great thing to aim for, but not really a suitable first step.
The first step is called CCNA (Cisco Certified Network Associate), and you can find lots of information about it on the Cisco web site. It is already quite challenging.

If you want to study CCIE and get certified, though there is no pre-requisite for taking the exam, but an extensive hands-on with Cisco Routing and Switching devices and protocol is a must.
