DO you want to upgrade to a major version or just to a service release i.e SR6?
Are the CCM servers in cluster or standalone?

Hicham,
Do you have a SAS or SASU contract? I would suggest you to speak with your Cisco account team and take it forward. There might be different options based on the current OS/versions availability, specifically in the major upgrade between the trains. I have also come across a lots of EOS/EOL MCS servers that have been done by Cisco recently.
As mentioned please take your Cisco account team into loop before planning anything on this.
