How I can change the languaje to Spanish of the Cisco IP phone registered in the Call Manager 6.01.2000-3?

I have this problem too.

Select and download the locale you need for your version

Cisco Unified Communications Locale Installer

then you need to install it:

Locale Installation

once it's installed you will have the option to change the locale on the phone
