I have 2 6500 and we use HSRP , the gateway ip has a virtual MAC, but one computer has stolen this IP and the network crashed, how can I protect this IP?

Was it a DHCP address that was given out that caused the problem?
You could simply put an ACL on your user VLAN interfaces blocking that IP.

No, the problen is that in the same Vlan a host (manually) puts the gateway IP, the network is broken.

In that case, your best bet is probably to use static ARP entries so that a new host coming on to the network with that IP can't create a new ARP entry.

you can't tell the person who's 'stealing' this IP to stop doing it?
or shut down his switchport.
