We have a property management system interfaced to Unity through Percipia and the BellHop service. We're adding a new hotel property that has a different property management system and has a second Percipia server.

Is it possible to run two instances of BellHop on a single Unity server, each communicating with a unique Percipia box or will we need to run two Unity servers each with it's own BellHop?

Bellhop was designed only as a single-instance app - it'll create all kinds of local DB consistency issues if you try and fire up two of them unfortunately. You'll have to use two different systems if you want that functionality.
