Absolutely, it's done all the time.

The technology would be seriously lacking if you couldnt, since its oftentimes deployed in a server farm environment that is architected for redundancy.

So, a typical scenario is one in which two server farm switches in a routed layer (access, distro, etc) run HSRP between them and have an instance of the v-server farm configured on each. One of the switches will act as the HSRP/SLB primary for all the v-server farms and the other will be the standby switch.

There's plenty more to be said about this. I am just giving you one typical example.
