Not too familiar with GNS3, however I do use dynamips and GNS3 is just a GUI version of dynamips so it is much the same.

AFAIK there is a generic switch available in dynamips/GNS3 or you can add an NW 16ESW module to a 36xx router and use this for a lot of your L2 switching. It's not as good as having a full blown switch, but it's better that nothing.

Other than that, you can not load Catalyst IOS versions in GNS3/Dynamips as only router hardware is emulated.
