I am installing MPLS service in a few of my locations and in process of configuring the routers. I am using cisco 1841's. I am a little unsure on how to configure BGP and configuring the serial interface for the MPLS..... Any ideas?

Are you required to configure BGP by your SP?
If they could just route your networks statically, that would eliminate any need for configuration by your side, just IP addresses and one defaulkt static route.

Our provider will only use BGP-4. Do I have to use sub-interfaces for MPLS?

Which type of serial interface is that, clear channel or frame relay ?

Then on a point-to-point subif you will set addresses given by SP, associate the pvc to it and possibly you will be peering with router the other end of the circuit.
