We are installing a 6513 as a core switch at out school. Have most of the config worked out. Our Edge building swithes are 3750s. I use the Cisco CNA for the 3750 switch which use very helpful if you don't use the CLI much. CNA doesn't support the 6000 series switches. Are there any lower end GUI tools that would work with the 6513?

I am not pretty sure for configuring all the features but you could try Cisco works Campus manager.
I found it an awsome friend for network admin. I just used it just to get overview of the network like to see physical topology, spanning tree and more.
CAUTION: Merely a single click can change the configuration. So, I would rather suggest to learn CLI, You can see lots of fun.

ip http server? Use the SDM?

I have ip http server enabled. We are running IOS. I have used SDM on other products. Is SDM only supported on the 6513 if running CATOS?

Have a look at the CiscoView Device Manager which is a standalone GUI for managing the 6500 switch.
