How can I reset a user's voicemail so that they can go throught there initial voicemail setup again?

sure - on the profile page for the user you can check the box labeled "Set for self enrollment at next login". This setting can also be configured for larger groups of users with the BulkEdit tool found in the Tools section of the web based admin for CUC 2.1
