I would like to know if it is possible to NAT traffic through a VLAN interface. I've heard from deployment engineers that it can not be done, but it doesn't sound like something that shouldn't work.

You can NAT through a vlan interface but what the engineers were probably talking about is that the only layer 3 switch that currently supports NAT is a 6500 switch. All other current switches do not support NAT.
