Do you know what is the througput on an IDSM-2 when in "promiscuous mode"?

As per the data sheet it is 600 mbps.

Thanks, honestly is the 500mbps or 600mbps throughput acceptable considering that the IDSM-2 would cater a server farm?

Cisco allows to load-balance eight IDS(es) at once giving about 4 Gbps throughput. So this all depends on your network/server farm.
