I have one server which needs to be available to different network segments using different IP addresses.
Is it possible to translate a single IP address to multiple different IP addresses, depending on the outgoing interface? So something like multiple ip nat outside commands, each with different global address pools?

Yes it's possible! You can use the alias commands on the specific interface or use policy based NAT per interface based on src/dst machine IP addresses.
