Sanity check question. If I have access switch with say vlan 10, 20 and 30 - and SVI's on the router for each of these 3 vlans - do I need to add an ip default gateway statment on the access switch for each of these 3 vlans - pointing to the relevant SVI vlan interface on the router?

It depends,
Depends on the access switch model - the only reason you would add a ip default-gateway would be for management - as you can only have 1 layer 3 vlan interface in most access layer-switches.
You access switch is a layer 2 device, it will not perform in routing, so only one SVI needs an IP and default-gateway, the management VLAN.
