I am bringing a new remote office online, using a CME for the first time. When setting up dial outpulse with the carrier, I was asked how many digits did I want outpulsed.
Coming from a non-Cisco TDM/VoIP world previously, I am unsure on what Cisco as the CPE would expect - 3,4,7,9, or 10 digits.
Any help would be appreciated!

Depends entirely on how many you want. All you need is a dial-peer that matches the number of digits coming in. Common practice is to use however many digits are used in your internal dial plan, because that is all you need. If you use 4-digit extension, then take 4 digits from the carrier.

I figured as much - my instinct was to take 4 as they are all in a single contiguous DID block - if I had to add other NPA-NPX, i would reconfig to take more.
