We have two 3750 switch stacks. Somehow two ethernet cables got plugged in between the two stacks without having an etherchannel defined for them. Needless too say communication between the two stacks got a bit messed up. I am looking for an explanation on why this occured. Thanks!

It probably bridged 2 different vlans together which would cause a major disruption .

Hello Richard,
an etherchannel could form it one side starts to negotiate a PAGP bundle and the other side is ready to answer.
one side should be in desirable state to do that
What Glen suggests is more likely the cause of the problem.
