We have serveral ASAs installed and adding more. Of course the new boxes have a new version of ASDM. How can I access both the older and newer versions of ASDM?

Here's an example-
Cisco ASDM 6.1(5) is a web-based application to configure and monitor the ASA/PIX security appliance running version 8.0 or 8.1. ASDM 6.1(5)51 is an engineering build based on the ASDM 6.1(5) release.

You would have to change the config to point to the one you want.
asdm image disk0:/asdm-613.bin
or
asdm image disk0:/asdm-603.bin
Why not upgrade all the boxes to the latest or a version you're comfortable with?

Yes, you will have to read the release notes. It will tell you which versions are supported.
