This just occurred to me, so I assume it has already occurred to people much smarter than me... If the IP Phone spans all voice to the connected PC, should it be relatively trivial to build a service that runs on the PC to capture that traffic and assemble it into a wav file? I assume someone has already put together a utility like this. Has anyone seen it?

If your antivirus software is lax, Cain will capture Voice RTP packets and assemble them back into a WAV file, though your IT staff might frown on this app.

Also, an old hack tool called VOMIT (Voice Over Misconfigured IP Telephony) is capable, if you use Linux for your desktop...

If you need something more polished or formal, you will likey into some pay type apps.
