Fax Server Initial OS Config

All,

I have installed the OS from Cisco that comes with the MCS server. I want to get the OS all shored up before I begin the Fax Server (Captaris) install. I see that the OS is Win2003 with SP1. Can I update this server via the MS website or is it like a Unity server and only Cisco patches should be applied? Also, will I experience any issues if I join our domain and install our AV solution?
