One side should be an FXO (office).

There is no crossover configuration for FXS-to-FXS ... they have different signaling roles.

Good Luck

Hi, I'm doing the same, i don't know if it is the same stage:

phone-->FXS(router 2801)----leased line-----(router 2801)FSX----phone

I use pots and voip dial-peers on both router to communicate the analog phones.

Wrong, wrong, wrong.

The FXS is the 'provider' and the FXO is the 'client'. This will not work. You may be able to get some basic functionality to work, but it will be completely backwards and you will have problems.

FXO / FXS is hardware bound, and telephony signaling is rigid. You will absolutely need a FXO.
