Sure. You don't even need SNMPv3 for this, either (however, v3 will make things more secure). You can define as many trap destinations as you want, though Cisco recommends no more than three:

snmp-server host 10.1.1.1 ...

snmp-server host 20.1.1.1 ...

You can also define multiple community strings or SNMPv3 credentials for polling. See http://www.cisco.com/en/US/tech/tk648/tk362/technologies_tech_note09186a0080094489.shtml for more on securing SNMP.
