Where I can found the command reference guide for IP Phone 7941g in order to remotely modify the configuration of a Cisco IP Phone 7941g?

You cannot modify the configuration of a phone via SSH. The access and commands are not documented.
Configuration and settinga are made exclusively with the .xml files that the phones loads via TFTP at boot.
