We would like to use a Cisco IP phone to connect to asterisk using SIP and not SKINNY. What is really involved here, can this be done? are the cisco phones designed to use SCCP only or what do i need to change. Thanks.

Hi, your best source of information is voip-info.org. Enter your phone model in the search box and you will be given many configuration examples and hints.

Yes, this is possible.
Here are a few Cisco documents you may find helpful:
http://www.cisco.com/en/US/docs/voice_ip_comm/cuipph/7960g_7940g/mgcp/firmware/matrix/frmwrup.html
http://www.cisco.com/en/US/products/hw/phones/ps379/products_tech_note09186a0080094584.shtml
If you have a Cisco contract, you should be able to download the SIP firmware files from Cisco.com for your phone type.
hth,
