UCCX will have NO impact on your voice quality. I'm sure you'll find that if you make a normal non-IPCC call you still have poor voice quality.
Normally it's due to badly configured switch ports (assuming that your hardware phones are OK).
You need to be trusting DSCP, not CoS (often the case if you've incorrectly configured AutoQoS).
Post your LAN switch configs for a start.
