Need a few more informations than that. Where do you plan to deploy the kits? How tall is your room?

12U? No need to know how tall the room is for that. :)

Each U is 1.75 inches tall. So 12U is 21 inches tall.

A 2600 router is 1U tall, as well as a standard 3560 switch.

Looking at your gear, I'm guessing all the units are 1U tall, so you have 5U of space or 8.75 inches tall. For the small racks you are looking at, I'd recommend going ahead with the 12U. That leaves room for additions in the future.
