How can I check the memory usage in Cat6500.
Is it show memory. What is the difference between process memory and I/O memory.

That's the correct command. Or "show proc mem".
I/O memory refers to the buffers available on the interfaces.
Process memory is an indication of how much dynamic memory each specific process is utilizing.

With hardware with following specs
MEM-S2-512MB Catalyst 6500 512MB DRAM on the Supervisor (SUP2 or SUP720)
MEM-MSFC2-512MB Catalyst 6500 512MB DRAM on the MSFC2 or SUP720 MSFC3
how can I check these values in the IOS. Do they relate to processor and I/O memory.

In IOS,
"show ver" will tell you MSFC memory size.
"remote command switch show ver" will tell you memory size on SP.
