I'm interested in getting, via SNMP, the same type of information that one can get typing 'show mgcp stat' from the CLI. At the very least, I'd like to capture Inuse channels and Free channels (which appears in the 'show mgcp stat' output under 'DS0 Resource Statistics'. The bin on this voice gateway is c2800nm-adventerprisek9_ivs-mz.124-20.T1.bin. I've searched and searched and searched and I've had no luck. I'm hoping the NetPro Community can come to my aid.

You will be better off going through a CUCM aided tool for this. A large portion of the call stats are not handled by the gateway, but rather by CUCM since the Q.931 is backhauled.
This would mean looking through possible apps like CUOM, using RTMT, CDRs, etc.

You can use a SNMP tool like "iReasoning MIB browser" (it's a good one)
download cisco MIB files you need from
ftp://ftp-sj.cisco.com/pub/mibs/v2/
and than use the MIB browser to walk the values you want to
dont forget to configure snmp on the GW and on the MIB browser,
snmp-server community
snmp-server community
for the GW
