Are the SFP ports on the 3560 only for uplink ?

No. The SFP ports are just modular Gigabit Ethernet ports. They can be used to connect any device, however the media must match (obviously). Typically however you would use these to uplink the switch into a distribution or core layer.

I currently use one SFP slot in a 3560 for a connection to a Hyper-V server using a GLC-T SFP. This is more the exception rather than the general rule though.

No, you can also plug in workstations, servers, etc. into them. In fact the PC I'm posting this from is connected to one.

You can use the SFP ports for just about anything: Uplink, desktop, printer (what a waste, though), AP, etc. Just note that don't expect to get PoE in there without a power injector.

Traditionally, SFP ports are used as uplinks because of the Fiber Optic options. Hey, whatever floats your boat!
