How can i tell to what AP i am connected from the laptop perspective ?
I used the intel wireless utility but the mac addresses didn't match with the APs i have

You can try to enable Aironet IE in the WLAN SSID advanced tab. You can also look at the radio mac on the ap not the ethernet mac.

It allows the AP to send out ap information including the AP name.

Will the AP's reboot after i apply that on the controller ?

They won't, but that specific WLAN will temporarily go offline, your wireless clients will lose a packet or two
