Hi there,
I will have a CCM 5.x and CCM 7.x in parallel. I will migrate user on the 7.x.
I'm asking me, when I install 7.x do I have to know what patches have been applied on the 5.x so I will install them on 7.x too ( in case 7.x did'nt fix it )
if yes, how do I know what patches have been install

Try OS Admin webpage and there under Show > Software.

CallManager patches are available in Start>>>Programs>>>Cisco CallManager>>>Patches.
