SSH v2 yes - from the 3750 Q&A
Q. Does the Cisco Catalyst 3750 Series support SSH v2?
A. Yes.

IPSEC - no. No catalyst switches with the exception of the 6500 support IPSSEC, for that you need a router.

Thanks Jon!
So, I need to either use a 6500 switch or look into a router with IPSEC capabilities, right?

Yes although you could also look at a PIX/ASA device as these support IPSEC as well.
Be aware that with a 6500 you still need an additional card so it is a very expensive solution if all you want is IPSEC :-).

Jon,
Thanks for the quick response! Yes, all I need is IPSEC. Since IPSEC is required for my gateways, I think I'd stay with the 3750G and get a router with IPSEC capability.
Thanks again!
