I need to add 2 ethernet ports to my 3845 routers in order to implement HSRP. What WIC or NM should I use for this?

You aren't allowed to allocated IP addresses on the same subnet on 2 different ethernet ports on the same routing device hence your HSRP design won't work.

Couldn't the 2 ports used for this be on their own subnet? Don't they just need to talk to each other?

HSRP configuration requires the peers to be on the same subnet.
